Peaches a la mode

Craving a healthy sweet treat this summer? Try this simple Peaches A La Mode recipe from the Mayo Clinic — it’s refreshing, delicious and made with just four ingredients. Serves 2. 

INGREDIENTS 

2  medium peaches, peeled and thinly sliced 
⅛ teaspoon cinnamon 
⅓ cup low-fat granola 
1  cup fat-free vanilla ice cream

DIRECTIONS 

1. Heat the oven to 350º F. Lightly coat a small baking dish with cooking spray. 
2. Place the peaches in the baking dish; sprinkle with cinnamon and granola. 
3. Bake until the fruit is bubbling, about 30 minutes. Let cool for 5 to 10 minutes. 
4. To serve, divide the ice cream into two bowls (½ cup each). Top each with half of the baked peaches. Serve immediately. 
5. For variation, try berries, pears, plums or apples — or a combination of these fruits.
